A Delicious Pinterest Win

Every now and then I get a wild hair and make one of the 7 billion recipes I've pinned on Pinterest. Last night was one of those nights. It did not disappoint like some have in the past. It was so easy. I put it in the oven at 3:30 and let it cook at 250 degrees until 6:30. Worst part was having to smell the deliciousness for 3 hours.

I found the recipe on Pinterest and it linked me to this Brienna's blog, Darling Doodles. I give her full credit for this! Go check out her blog. It was so delicious. I measure deliciousness not only by my picky taste buds but also if Brian says anything positive without being asked I know it was good. :) 

Here's what you'll need...
About 2 lbs boneless, skinless chicken breasts 
2 cups of rice 
Butter (buttah...in my Barbara Streisand voice)
1 can cream of chicken
1 can cream of celery (save 1 of these cans, ok?)
1 packet Lipton onion soup 
Aluminum foil

Butter your casserole dish well. Butter makes errry'thing better. In a seperate bowl mix the can of cream soups, fill the saved can because you totally follow directions with water and add it to the soups along with the 2 cups of rice. Stir it up. Stir it up. 

Now place the soupy, ricey mixture to your buttah'd casserole dish. 

Now place your chicken on top of the mixture. I wash my chicken. What you do or don't do with your chicken is your business. Sprinkle the Lipton onion soup on top of the chicken.

Now cover with the foil. Place in oven and go about your business. I'm telling you 3 hrs at 250 degrees was perfection. I know oven temps and times vary. I'm sorry I have no pics of the completed masterpiece as myself and my family inhaled it. Ha! I served with corn. 

My mom said she uses this same recipe with pork chops. When you visit Brienna's site you'll see in the comments all the changes and suggestions from others. Over. Achievers. It's fine as is and I appreciate when folks share simple deliciousness like this.

The Time I was Gluten-Free for One Day

Yes...you read that correctly. One. Day. No Gluten. Nothing but healthy food for a whole 24 hours.

I chose to try the no gluten diet because my stomach hurts like all the time. I didn't buy a lot of stuff. So I did well the morning and afternoon before I went into work and all night at work. Before I went to bed the next morning I snacked on some all natural, gluten free, no gmo's, blah blah blah chips. They were good but before I went to bed my chest felt tight. Great! One day of healthy food and now I have a heart attack?? I had reached the point of exhaustion to where I didn't care how I felt and passed out. Yes...you can be that tired. 

So I woke up that afternoon feeling alright. I had my coffee and got ready for work. On my way to work I snacked on those healthy chips again. I started sneezing and by the time I got to work I was developing hives. I narrowed it down to one specific ingredient. 
Boom! Ugh! I do have a few weird and confirmed food allergies...watermelon, sesame seed, pecans, seafood and now I guess safflower. You can imagine my frustration by 5 AM after sneezing and itching. One of my managers got to work early with hot donuts and you better believe I ate 2! Give the gluten to me!!! I even felt better afterwards. I don't think I've ever been so happy to see a bottle of Benedryl after I got home. So benedryl and 7 hours of sleep and I was back to my old self. I totally hope this makes you laugh because I laugh. I would lose my mind if I couldn't laugh at the situation. I mean the worst thing I have to do to avoid this scenario is eat some French fries! 

I looked into the Paleo-Primal diet. I would starve. Positively. You people are super dedicated. So I've decided this...I'm going to eat my regular diet but try to remove breads and sweets, fried food and start working out again. I really don't eat much. I've always eaten small meals throughout the day. I NEVER drink sodas. I only have coffee, water, and occasional wine and margaritas. Lol. It's worked for me all these years. I just need to tone up.

Great Investment

Hey y'all! In case you're new here (I have been gone for a year), my name is Lindsey and I appreciate you stopping by to read. I live about 30 miles from Memphis, TN. I'm a nurse in a busy NICU 3 nights a week. I am moving to the Atlanta area in the Spring so if you're from the area I'm going to need some new friends. :)

My blog is in a "construction phase." In a few weeks there will be a new name and design so bear with me. I enjoyed blogging in the past but when I went back to work full-time I had issues balancing it into my life. So here I am giving it another shot. 

I am absolutely NOT a fashion blogger nor do I plan to be. If you want to check out an awesome one my SIL is a fashion blogger at Walking In Memphis In High Heels. She works really hard and is good at what she does. I'm not sure what category I fit into. If I had to choose it would be Lifestyle blogger. 

I've followed Carrie for a while now on Instagram and I've seen her link up "What Wives Wear" and it seems fun so I thought I'd stop by meet some new people and wear some of my favorite pieces that I never wear. I usually only wear leggings, t-shirts, UGGs, and scrubs to work because I rarely leave my house on off days. How lazy! 

A few months ago I saw this Herringbone vest at Posh Boutique. J. Crew makes a similar one like I can afford that! Ha! Since I rarely spend money on myself I asked my mom to get it as an early Christmas gift. Of course she got it for me and said not to count it towards Christmas. Gotta love moms! 

It's such a great piece to have and goes with so many different things. You can wear it as a dressy or causal piece. I didn't think I would enjoy it so much but it's what I wear almost every time we go out. Today I wore it with a pink chambray shirt that I searched high and low for but my SIL found it. It happened to be marked down like 75% for Black Friday. Yay! I wore skinny jeans and black leather boots. 



I love these boots as well. I love them so much that I have a pair in brown too. They are comfortable enough for shopping and travel.

Hey Y'all!

Hello! It's been so long and let me tell you some things have changed on the blogger/blogspot thingy. I mean...it has been a year though!

This will be quick. I've decided to blog again but I must make some changes. This site will be under construction. I need a new look and I'm going to change the name. Let me tell you...coming up with a name is not so easy. I do have a few things in mind. If you have suggestions for a name or for a blog designer holla a'cha gurl! I'll be sure to include a small but sweet give away when I get back. 

I hope you all had a Merry Christmas and I wish you the best in 2015 and Happy Tuesday! Today I will shove even more junk food in my mouth while watching the Georgia Bulldogs play in their bowl game. Y'all know "The Dawgs" are our jam. 

Finally...tell me what you're into reading these days. What kind of things interest you? If you're into craziness you know I've got plenty! I'm gonna TRY to do the primal diet as of January 1...hahaha! I mean that in itself should make you want to come back for more. #junkfoodjunkyhere

Plans for 2014, TM2, and Polar Vortex

Is that the most random title ever? I've been meaning to post plans for 2014. I don't say resolutions just because and I no longer say goals after last year because I want to beat myself up when I don't meet them. Type A personality here! So I'll say plans because plans mean you have good intentions and sometimes they just change. Yeah...uh-huh.

This year I plan on...
•stopping cussing like a sailor. It's bad, y'all. Really, really bad.
•going to church on Sundays no matter how tired I am not because I think it's a requirement to get into Heaven but it makes me feel good and it's time for me and the man upstairs.
•running several 5Ks/10ks and MAYBE a half (OMG...she's crazy) 
•taking Aubree to Chicago to meet our family there. Maybe my mother can come with us and we'll have a girls trip. 
•going to NYC no matter what!! Brian will not go so I'm planning on this being a girls trip
•taking a family trip to Disney World for the boys birthdays in September.
•winning the lottery so I can take all of these trips...geeze
•getting things more organized around here
•blogging more

There's more but I've already forgotten. Ha! That's Lindsey for ya! Note I didn't say eating healthier because that's just not going to happen for me. I have tried! Today I had coffee, bacon, eggs, biscuits, water, pizza, Hershey kisses x 2, Stacey's Pita Chips (that's healthy'ish), more coffee, Chicken Alfredo, 2 pieces of bread, water, and 4 chocolate chip cookies and I'm hungry. That's just who I am. I know it's not good for me but I'm picky. Sorry I'm not sorry at all! I'm happy for those that choose to eat better than me. And no...I don't allow my kids to eat this crap food like me. Don't judge. 

Now onto TM2. I had NO idea these hot messes were coming back! I watched the review thing tonight and I had forgotten a lot. I still feel bad for Chelsea and I'm still concerned about Leah's grill. Jenelle...Lord help. I saw some things on the season preview that made me for real shake my head with disgust. Kailyn...if you have read my posts in the past you know I pretty much mentally shut down when they do her stories. Ugh. Maybe I should add that to my goals...pay attention to Kailyn. Hmmmm. So, I'm excited that this is coming back into my Tuesday night life but so is Dance Moms...yet another guilty pleasure of mine. I should really be ashamed to watch Big Abby yell and scream at those kids and the mothers fighting...ha...but it's like a bad car wreck...you just have to look. 

Moving along...I hope everyone survived the Polar Vortex! Us Southerners barely did! I don't ever remember subzero wind chills here. I wore 2 pair of pants and 3 shirts to work the other night. Btw...if you wear fleece leggings under scrub pants lint and fuzz will stick to your rear all night. Anyways, we were all good over here. We never lost power like some due to excessive amounts of energy being used. I hope it doesn't get that cold again but I saw a nasty forecast for late next week. We shall see! 
This little guy wanted to snuggle around 4AM  when it was -10 with all his static electricity in his hair. Cutie!

The Gift that Keeps on Giving

Oh hi! It's me again! I promise I'm going to do better at this blogging thing. It's a 2014 goal of mine which you'll get to soon read about later this week.

The Friday before Christmas was Aubree's Christmas dance. She was beautiful!

But seriously, y'all, she was gorgeous!

So this year for Christmas we got Flu A...H1N1...whateva you want to call it but I refuse to say I had "swine" flu because I love bacon too much and it may turn me against it. It came with 2 sides...bronchitis and sinusitis!! Antibiotics, steroids, and nasal spray for everyone!

I had my flu shot and I'm glad I didn't pay for that thing! I admit I probably didn't get as sick as I would've without it. Instead of feeling like I'd laid in front of a combine and let it spin me into its headers and spit me out (Lordy she's country and graphic) I only felt like I'd been hit by a Peterbilt (my daddy's a trucker). I didn't get fever until Christmas night and it all started on the Friday before. Apparently being vaccinated can also "mask" some symptoms or whatever. So YAY for exposing errry'body! 
Come sit on your momma's lap and let her breathe H1N1 on you little cuties!

All the delicious goodies I made with my aching flu hands! It obviously didn't alter the taste. But really, I wore gloves. Can't stand stickiness on my hands. Yuck!

My dad and Aubree stopped by for a quick minute so she could open gifts and he left me food from my Meemaws. I think they held their breath the entire time!
And the cuties sporting their little shirts the day after Christmas at the pediatrician's office. We never got out of our pajamas on Christmas Day. 
And Lawdyyyy! I don't think we'll be eating Honey Baked Ham for a while here! Love them during the holidays but we've eaten this thing for days! I kept checking the expiration date like it was gonna change. If you're ever looking for a gift that keeps on giving here's another idea!

So, it was not the greatest Christmas ever. We didn't get to spend time with our families. Brian's grandparents and mother were down with the flu too. We also have no idea what the next several months may bring for us so that is sad too. Nobody's dying or divorcing...take a deep breath...but it's not something I will talk about here right now. You understand, right?

I hope you and your family had a Merry Christmas and were not recipients of our gift that keeps on giving...unless it was the Honey Baked Ham of course! :)

Mommy's Wish List

In case anyone still reads or is wondering what to get me for Christmas I have been kind enough to compile a list as I battle my lovely night shift induced insomnia. #longestsentenceever

This list is in no particular order. Who has time for that shiz? Ready. Set. GO!

I think one of these would be spectacular to own but I also noticed this the other day...(see below)

This stuff is like magic in a bottle but it's pricey. Great for a mommy stocking stuffer.

I'm def not a huge Merle fan. I'm a Clinique gal but I swear by this primer. It's pretty awesome.

For crying out loud...someone please get my special ass a high tech corkscrew. I have broken corks and recently my hubby dropped a whole bottle on the floor trying to open it. #alcoholabuse Btw...said bottle cracked one of the kitchen tiles.

I refuse to say how long it's been since I bought a bra for myself. Lawdy! I wear push-ups for obvious reasons. My bras are so old there's no longer a bomb in the shell. Help me, VS!

For me there are no other jeans but Silver. I've been wearing these babies since high school. I need some new skinny ones.

I realize I'm 31 but these are too cute. Blue is my favorite and I'm loving this shade. Size 8! Ha!
