A Delicious Pinterest Win

Every now and then I get a wild hair and make one of the 7 billion recipes I've pinned on Pinterest. Last night was one of those nights. It did not disappoint like some have in the past. It was so easy. I put it in the oven at 3:30 and let it cook at 250 degrees until 6:30. Worst part was having to smell the deliciousness for 3 hours.

I found the recipe on Pinterest and it linked me to this Brienna's blog, Darling Doodles. I give her full credit for this! Go check out her blog. It was so delicious. I measure deliciousness not only by my picky taste buds but also if Brian says anything positive without being asked I know it was good. :) 

Here's what you'll need...
About 2 lbs boneless, skinless chicken breasts 
2 cups of rice 
Butter (buttah...in my Barbara Streisand voice)
1 can cream of chicken
1 can cream of celery (save 1 of these cans, ok?)
1 packet Lipton onion soup 
Aluminum foil

Butter your casserole dish well. Butter makes errry'thing better. In a seperate bowl mix the can of cream soups, fill the saved can because you totally follow directions with water and add it to the soups along with the 2 cups of rice. Stir it up. Stir it up. 

Now place the soupy, ricey mixture to your buttah'd casserole dish. 

Now place your chicken on top of the mixture. I wash my chicken. What you do or don't do with your chicken is your business. Sprinkle the Lipton onion soup on top of the chicken.

Now cover with the foil. Place in oven and go about your business. I'm telling you 3 hrs at 250 degrees was perfection. I know oven temps and times vary. I'm sorry I have no pics of the completed masterpiece as myself and my family inhaled it. Ha! I served with corn. 

My mom said she uses this same recipe with pork chops. When you visit Brienna's site you'll see in the comments all the changes and suggestions from others. Over. Achievers. It's fine as is and I appreciate when folks share simple deliciousness like this.

The Time I was Gluten-Free for One Day

Yes...you read that correctly. One. Day. No Gluten. Nothing but healthy food for a whole 24 hours.

I chose to try the no gluten diet because my stomach hurts like all the time. I didn't buy a lot of stuff. So I did well the morning and afternoon before I went into work and all night at work. Before I went to bed the next morning I snacked on some all natural, gluten free, no gmo's, blah blah blah chips. They were good but before I went to bed my chest felt tight. Great! One day of healthy food and now I have a heart attack?? I had reached the point of exhaustion to where I didn't care how I felt and passed out. Yes...you can be that tired. 

So I woke up that afternoon feeling alright. I had my coffee and got ready for work. On my way to work I snacked on those healthy chips again. I started sneezing and by the time I got to work I was developing hives. I narrowed it down to one specific ingredient. 
Boom! Ugh! I do have a few weird and confirmed food allergies...watermelon, sesame seed, pecans, seafood and now I guess safflower. You can imagine my frustration by 5 AM after sneezing and itching. One of my managers got to work early with hot donuts and you better believe I ate 2! Give the gluten to me!!! I even felt better afterwards. I don't think I've ever been so happy to see a bottle of Benedryl after I got home. So benedryl and 7 hours of sleep and I was back to my old self. I totally hope this makes you laugh because I laugh. I would lose my mind if I couldn't laugh at the situation. I mean the worst thing I have to do to avoid this scenario is eat some French fries! 

I looked into the Paleo-Primal diet. I would starve. Positively. You people are super dedicated. So I've decided this...I'm going to eat my regular diet but try to remove breads and sweets, fried food and start working out again. I really don't eat much. I've always eaten small meals throughout the day. I NEVER drink sodas. I only have coffee, water, and occasional wine and margaritas. Lol. It's worked for me all these years. I just need to tone up.

Great Investment

Hey y'all! In case you're new here (I have been gone for a year), my name is Lindsey and I appreciate you stopping by to read. I live about 30 miles from Memphis, TN. I'm a nurse in a busy NICU 3 nights a week. I am moving to the Atlanta area in the Spring so if you're from the area I'm going to need some new friends. :)

My blog is in a "construction phase." In a few weeks there will be a new name and design so bear with me. I enjoyed blogging in the past but when I went back to work full-time I had issues balancing it into my life. So here I am giving it another shot. 

I am absolutely NOT a fashion blogger nor do I plan to be. If you want to check out an awesome one my SIL is a fashion blogger at Walking In Memphis In High Heels. She works really hard and is good at what she does. I'm not sure what category I fit into. If I had to choose it would be Lifestyle blogger. 

I've followed Carrie for a while now on Instagram and I've seen her link up "What Wives Wear" and it seems fun so I thought I'd stop by meet some new people and wear some of my favorite pieces that I never wear. I usually only wear leggings, t-shirts, UGGs, and scrubs to work because I rarely leave my house on off days. How lazy! 

A few months ago I saw this Herringbone vest at Posh Boutique. J. Crew makes a similar one like I can afford that! Ha! Since I rarely spend money on myself I asked my mom to get it as an early Christmas gift. Of course she got it for me and said not to count it towards Christmas. Gotta love moms! 

It's such a great piece to have and goes with so many different things. You can wear it as a dressy or causal piece. I didn't think I would enjoy it so much but it's what I wear almost every time we go out. Today I wore it with a pink chambray shirt that I searched high and low for but my SIL found it. It happened to be marked down like 75% for Black Friday. Yay! I wore skinny jeans and black leather boots. 



I love these boots as well. I love them so much that I have a pair in brown too. They are comfortable enough for shopping and travel.
